Complex and layered aromas of plum, orange rind, bing cherries and blackberry with faint earthy aromas of mushroom and soil. Tannins are masculine and well-balanced with bold, ripe fruit giving the elegant structure. Flavor profile is dominated black fruits and smoked meats with underlying of blueberry, cocoa and toasted oak. Drink through 2022.
27-31 days on skins with both indigenous and commercial yeast strains used. Post–maceration wine was drained directly to barrels where it spontaneous malolactic fermentation.
